landuse=orchard uses a completely wrong tagging schema in my opinion. The tags are in plural form as you said, but they are also not generalisable. There is the tag trees=apple_trees, and trees=berry_plants (don't know why that *-sign is on the wiki). But what would you do with grapes? Would that be trees=grape_plants? The taxon key might be a better tag because it implies the scientific naming (sort of). But there is no way this should be documented on the wiki next to the species tag.
