Is there a comprehensive list of the changes which Tails makes to Debian to
create that environment? If it's just starting Vidalia, I'm sure that can
be easy built into the text booting option. A greater shouldn't be
necessary, either.

I am hoping to be able to make some progress on this front.

It won't look quite like "Tails Server Edition", but I plan on using Tails
as a base to build a Tor PaaS/SaaS using Docker, which should allow people
to deploy anonymous services (WordPress, XMPP, etc) with a single click.
This will hopefully ease some of Tor's Hidden Service deployment woes.
