Brave man! Globally, highway=path is mostly used without any access tags, judging by taginfo: http://taginfo.openstreetmap.org/tags/highway=path#combinations
So I think "Classic" and "Alternative" are adequate titles. "Established" and "Alternative" would probably be more accurate.
