Just to eliminate the obvious. 
The (  left paren signs is not a symbol but part of the ascii character set.
I wonder if there is a confusion between symbols and characters here.
Symbols were introduced in computing as special fonts where things like
graphics of phones and smiley faces etc were assigned to characters in
special windows fonts like symbol and wingdings.
So I  think what you are after is not symbols but extended characters. I do
not have your phone but 

When I press the star key I am offered a character from the extended ascii
set, not a symbol. .
If this is not what I want I press down  once and Talks announces more
characters.
I press enter on this.
I can then cursor up and down  and left and right what sounds like a whole
grid of characters.  If I cannot find what I want by cursoring right or left
then I can continue to cursor up and down onto new lines which offers
different characters like brackets, currency signs and so on until I find
what I want.
Is your phone not behaving like this?

I can find the 'char' key, but it doesn't help me find all symbols; for 
example ( or ) sign. There is a 'symbol' key, but it's all about emoticon, 
and non-speakable symbols.

After I installed Talks (at the first time), I can't find 'talk' key and 
'char' key is not 'talk' key by default. Now I did change 'talk' key to 
'menu' key on the left.

What happens if you press the CHAR key twice to brin up the Symbol list?
does it read anything on that screen? Also does Talks use he CHAR key as the
Talks key by default?

I'm not sure whether this question has been addressed on the list or not. I
got Nokia E5 last couple of days. Everything seems to be pretty nice with
Talks 5.01. I observe one difficulty I got. I can't type symbols apart from
'dot' and 'colon' that are available on the QWERTY keyboard. I knew I have
to press the third button on the lowliest line on the left and select the
symbol directly, but Talks can't read any emotocon anyway.
