Just do
sudo texconfig
I've been using i-Installer since Mac OS X 10.1 (now 10.3.5) without problems, and I only use texconfig to change the default pk resolution (600 dpi); the Configure function of i-Installer really does almost everything you need.
I think the best you can do is open the i-Installer tex package, run "Configure only", select the configurations you want (Formats Selection, Languages Selection, Formats Creation, Paper Size Selection, etc.) and the try your installation with some (La)TeX files.
