It is common to misplace payments on both sides - if that means stopping business system... no thanks. You can only turn off light when customer said so. However you can "dim the light" a bit, by reducing available connections, warning users and similar non-interupt methods. Just never ever try to hold customer data as hostage. Just a hint that you might do so will scare off anybody. As for price... let's see.
