I already had this discussion with someone else. I TOTALLY agree security-wise. My openERP server is running on a VM. But if you want to have different VM for each process (1 server, 1 web, 1 postgres), you'll have 3 OS running, with everything an OS need. But if those 3 processes are running on the same OS, they also share the same vRam, and a lot of other resources. IMHO, it doesn't worth it.
