The discovering files part is the quick part, its just reading the
directories and comparing the filenames and timestamps with its own
database. (if you do a rescan it doesn't have its own database yet!)
THEN it goes in and actually reads the files that it thinks are new
(everything with a rescan) and extracts the tags and artwork. This part
can take much longer. Then it goes through and deals with artwork, again
this can take quite awhile. 

Embedded artwork is not a problem per se, but it is easier to have
large images which can crash the scanner, you have to use a program to
check for image size. The other issue is purely time. If you embed the
same image in all tracks of the same album the scanner has to spend a
lot more time dealing with all those images. A single cover.jpg and no
embedded images is faster to process during the scan.
