There are a couple things you can do right now. I have an old slow tablet pointed at the web page of the server, you can easily see whats playing from that. If the builtin web page isn't to your liking there are some "now playing" web page plugins available that are specifically designed just for displaying the now playing info on an external screen. Someone has worked out a hack to allow a wifi enabled photo frame to be used as an external display, some of those are pretty inexpensive these days. Both the above run off the server, so they won't work when using a USB drive on the Touch (using TinySBS) since TinySBS does not have a web interface or allow plugins.
