Well, you can use ShoutWiki if you don't mind using a wiki style interface  
filled with some ads (ad-free if you'll gonna pay for it). Since it's based  
on MediaWiki, it'll allow you to customize your site through CSS so the  
potential for customization is practically endless (see Wikipedia vs. Wikia  
for comparison). Also, the staff there is very friendly and responsive.
