Hi, I just published a small module [1] that adds a new invoicing method to projects. It invoices a task using the number of hours computed in the Hours field for tasks in state done.
So it is a mix between existing "On timesheet" which invoices when the task is not yet finished and "On effort" which invoices by the estimated amount. Hope it's useful for other people too.
