USB-to-RS232 adapters are cheap and easy to come by, and well worth the
money when it comes to debugging your environment and code on evaluation
boards.

Since uClinux uses the GNU toolchain, which can be hosted under OSX, I
assume you should have no problems with that (assuming, though, you have
all necessary support libraries on your system -- this usually requires
having XCode installed).

As for a platform -- I'd say you're probably better off with ARM-based
boards, there are tons of options in the market (meaning there are many
cheap boards available, as well as full-featured ones such as the
Beagleboard).

I've been working with a Blackfin BF527 EZKIT, which is a nice (if
costly) kit, though some of the on-board devices still lack Linux
drivers (such as a keypad and touchscreen display). It's probably not an
easy option for a first board, though.
