+1 for 'screen' -- simple, easy solution, and does not try to be too
smart about terminal emulation parameters.

Coldfire is a cheap and well supported platform indeed. I mentioned ARM
that's what I am experienced with. Be sure to check out for full Linux
support for all included devices -- as I mentioned, some boards will
claim Linux support but not all devices will work. Depending on your
needs and the required devices, this can be a deal breaker.
