I can confirm that I can successfully use uDig 1.1 RC1 on Linux with the
geographynetwork.com WMS that you specified (and with the JRE supplied
with uDig). I found that the actual problem was from the WMS end rather
than uDig. If you paste in the following url to your web browser (taken
from the error log you supplied):

I've just tried uDig 1.1RC1 and the development trunk and both were
able to view the WMS you provided. MInd you I am on a Macintosh
right now. I'll get a linux user to try it out. Are you sure you
are using the Java JRE provided with the application? If a different
java is being used the Image IO plugin might not be used which could
cause your error. I assume that you are on a normal x86 linux box?
