Actually, Scibuntu is a much less ambitious undertaking than suggested.
It's not a full distro, but only a shell script that downloads and
installs relevant packages onto an existing Ubuntu desktop installation
(http://scibuntu.sourceforge.net). And there's no reason Slimbuntu
couldn't follow the same model. It would take some work to write the
script, although imo the harder part would probably be maintaining it
as newer versions of packages come out.

One nice aspect of the Scibuntu model is that you don't have to include
only one of each type of program. For example, you could include
multiple rippers, and let the user choose which to install.

I would guess that you probably want to leave the NAS market out of it,
because they're already running some pared down version of another
distro (non-gui), and you wouldn't use them for ripping and tagging
anyway. Likewise, optimizing for running slimserver probably isn't a
good match, because if you're ripping, tagging, etc. then it is
probably a desktop installation and not a dedicated server.
