So for the others out there I might have found the issue with the 3.5mm
audio stutter...

In my case, as NOOB, too much of diving in and not reading & following
the steps. 

If I load the image on to the SD card and fire up without adjusting any
settings I cannot see the player. So from there I SSH'd to the rPi and
ran picoreplayer. Then using option 5 I set the MAC address to a "Slim
Devices" one and restarted (6). Bingo it pops up in LMS as "SqueezeLite"
and I can play but get the stutter.

What I should have done was to SSH to the rPi and run picoreplayer. Then
use option 2 & 6. This time it pops up in LMS as "piCorePlayer" and
plays without any stutter. 

So there is more to option 2 than just setting the audio to the 3.5mm
socket. The overall volume is still on the low side but no doubt that is
a hardware limitation. Using "amixeser PCM 400" sets it as loud as it
can go until the next reboot so need to find how to make that a
permanent change.
