Funny you mention that because I was just about to try and find out if there were people running OS X on something like a G3 400 with 256Mb RAM?
What she wants is an office computer for reading mail, using Word, Excel, PowerPoint, browsing the Internet, viewing jpeg's and QT files. She also needs to work on files which are on our server and open them over the network. The computer doesn't have to fly, just work.
I've an iBook 800 and a G4-500 which are OK for me. I'm hesitating if the G3 400 will be enough for her?

It will work. You have the minimum RAM and CPU to work OK, but without an accelerated for OS X video card (PCI Rage128, Radeon Mac Ed. or Radeon 7000 Mac Ed.), it will feel slow and probably not as much fun to use. A G4 chip will mitigate some of that slowness, but the best (and IMO necessary) upgrade for OS X is the video card. I've used OS X with even a PM 7500 w/a G3 250/125/512k L2 cache with the Rage 128 and it's fine to use because of the hardware video acceleration.
If you're getting a Beige G3 with the RagePro (not the earlier Rage II) video chip in it, you're fine (if you run 10.1.5 or later), If it's a Blue & White G3, you're doing great. If it's a older "unsupported" PMac 7300-9600 with the stock video, it will probably feel too slow to be an enjoyable computer without one of the PCI video cards I listed.
