I got 10.1 on an almost stock 7600 with 96M and a Barracuda. It took more than one full day (wall-clock time) for the install to complete.
I tried 10.1 on a 3400c and failed, even with 80MB RAM and large hard disk. It just spat it's dummy out when you tried to reboot it in OS X. It's really not worth the effort IMHO.
As for 604e powered PCI PowerMacs I used a 7300/200 with OS X 10.1, a PCI ATi Rage 128 (ex-G3 B&W) and 144MB of RAM (hard disk was a 4.1GB Quantum SCSI drive) and it took a few hours (about 4-ish) to install and was pretty usable if you only ran one App at a time, it even kept up with my typing most of the time! I used to use it as a web server. It has since been ousted by a 9600/G3-300 running 10.3.5, with 504MB RAM, which is much better I have to admit :)
