With iTunes (v 4.7) any music that I install copies itself directly into the Music folder in my Home directory. If I don't want this to happen and instead have the music which stored on the larger partition to be accessed and not copied to the Music folder in my Home directory, can this be done?

There are 2 ways of doing what you want:
1) Preferences --> Advanced Uncheck "Copy files to iTunes Music folder when adding music to Library"
- or -
2) Preferences --> Advanced Change your iTunes Music Folder location to a folder on the larger disk.
I do both of these things as I buy some music online which must go to the Music Folder and the I keep rest of my ripped CDs organized in the Finder *my* way, not iTunes' way. And like you I have the 8GB boot partition limitation so I don't want to clutter up my Home directory.
