Resident recruiter chiming in here. I ask people about their degrees every day, though the farther away you are from your graduation the less it matters where you went to school and more *that* you went to school.
It's always good to go to a school with a reputation for being good in the thing you want to do, but reality is, going to MIT doesn't prove you can be the engineer I need, though it would get me curious because the chances are you are better than the crowd. At Novell, a UofU or BYU CS grad brings a certain base level of training that we can trust. However, especially with excellent Internship(s), any of the schools like Weber, USU, BYU-Idaho, SUU or others like that can be excellent. University Of Phoenix, ITT Tech and that class are better than nothing but I would recommend the State Schools first. UVU is practically free and aid is not hard to get... And they try really hard to cater to working adults. After you have a degree, University of Phoenix is OK for a secondary degree (MBA, etc). Truth is, the investment will give you a baseline you can get other places, but only after blood sweat and tears... And still you need to prove yourself to each new employer again and again and again. Good luck... And I strongly recommend school.
