For a server? *shrug* I think an SSD is a bit overkill but it depends very much on the workflow and use case. Even an HDD is going to be faster than a single network connection. If you have multiple computers connected to the server, writing many small files at the same time, an SSD will clobber an HDD. You'll definitely see the performance difference. As for a smaller SSD just for booting, there's a tiny advantage in that it's physically separate so if you're at all prone to making CLI mistakes, there can be an isolation advantage. But as far as performance, no not really. GPT supports 128+ partitions, and LVM is in somewhere into the stratosphere beyond that many.
