Format your text by specifically choosing the color BLACK. Don't use
AUTOMATIC for the text color. I've never used a Mac, but it sometimes
makes a difference in Windows-based Word Processing programs.

I think you've said it all. Force greyscale for black and white only
printing. That is, after all, the correct way to do it. There is no
problem here to solve.
