That's because 'updates.spamassassin.org' is a SA update channel name, not a 
hostname. It is used to construct hostnames that actually resolve and are used 
for sa-update.

It is a standard expectation of software on Unix-like systems to be able to 
maintain writable state in various /var/ subdirectories. Making /var or 
anything under it (except maybe /var/empty/) read-only is a risky bit of 
vandalism...
