Pitch is the tilt of the tracks on curves to counteract centrifugal force. Tilt keeps the force of the vehicle perpendicular to the guideway below the vehicle.
Roads are banked on curves for the same purpose. The greater the speed the more banking or pitch is required to keep cars on the road. Same for trains.
