I could be wrong, but I believe that IA64 usually referrers to Intel Itanium architecture, while distros generally refer to the AMD 64-bit architecture as AMD64. You might want to be careful, since I'm pretty sure they're different.

From what I could find, FC1 seems to have AMD64 support, as does Mandrake 10, and Gentoo. Beyond that, I can't tell you. I do know that my boss at work was very frustrated when he couldn't get Debian for his new quad-Opteron database server, and had to go to Gentoo, but I haven't had any direct experience with it myself.

Also, I suspect FreeBSD and OpenBSD would work, if you wanted to try that route.
