I don't know whether my finding works for you. I have similar problem on VM. I can't set higher resolution on Gnome. Later I found the resolution will be set automatically by increasing the window size of VM dragged with the mouse pointer. The bigger the size of the VM window the higher the resolution of the display.

Sorry, that does not help.

I rebooted a couple of times, and now, when I select "Full Screen"
from the "Machine" tab, I get what I was looking for without having
to use RightClick on the guest root screen -> Properties -> Settings ....etc.

Nevertheless, I think that the Graphics emulator and it's associated VBox driver
in the guest additions should include 1280x800 resolution.
