I can think readily of about 8 ways to use horsehair for bodies:

Single-strand midge body segments
Multistrand with diff. colors- flat for quill appearance
Multistrand roped for segmented look- can furl for extended bodies, dragonflies...
Multistrand square-knot weaved like JimmyD's longhorn stonefly
Belly-weave multistrand with a dubbing brush for scuds and shrimp- ala Potts flies +
Polish weave for sowbugs and stones- diff. color over/under
Large bunch tied in @ tail and pulled forward,
with follow-up wrap for segments- whole tail one color
Same as above, but only the top half for upper linear lines, like the pull-over on a humpy,             then segmented with the follow-up wrap.  needs a belly material.

Need more, let me know.  Some horse hair is translucent and can thus be used with undercolors & tinsels for special effects.   I tied some rusty scuds with some redish-chestnut horsehair and they were killer, but the horse moved away.  {: (
