I forgot to mention that I am using ALSA and not OSS (OSS doesn't support my sound card).
According to the documentation NVREC support OSS only, which means I can't use it. MythTV supports ALSA. What about mencoder?

All of the OSS applications work just fine if you load the OSS emulation modules under ALSA.
