\paragraph and \subparagraph work exactly like all of the \section 
macros. They're just a level lower than all of them... That is... just 
after the final:

\subsubsubsub...subsubsection

the next section deep is

\paragraph

and after that

\subparagraph

Conventionally, the hierarchy is

\section
\subsection
\subsubsection
\paragraph
\subparagraph

However, some documentclasses (and individual authors) add additional subs.
