I actually used a Quadra 605/LC475 as my main mail/web/ssh/etc server running Linux for a long time. It was nice and low profile, and a 33mhz 68040 (I'd replaced the 68LC040 with a full 68040). I later overclocked it to 40mhz and it and ran it successfully for many years. Great little box, I actually hung it on the wall. It was great when I'd have friends over and I'd point at the wall and say "That's my server, it's been up for a year and a half without a reboot". I had it upgraded with one of the 64 meg chips from OWC that gave it a total of 68 megs of RAM, IIRC. I still have the Q605 sitting under my mainbox as a stand and I occasionally start it up for kicks, and the LC475 is up in the attic somewheres. Later on I also used a Quadra 840AV, but I can't say for sure that it was any faster for my uses. I had a full 128 megs of RAM for it though, which was the main reason I switched away from the LC475/Q605. Its claim to fame was continuing to run while the lower inch of the mobo was under water from a leaky washer feed hose. It did eventually kick the bucket, possibly from corrosion despite careful cleaning and drying. Still in the closet though, may resurrect it someday. SE/30 is neat too and a nice little compact box. It'd probably suit a basic file server need just fine. IIfx would be a fun thing to say you had running with its heritage, but they're kind of rare and hard to find memory for.
