The late Bob Donalds of the old Boston Engine wrote a blog for VW repairs. He stated in a Vanagon head gasket replacement blog that it was best to use the sealant that supplied by the gasket mfgr for the rubber head gaskets, and stated that silicone sealers may attack the metal of the head. I just did my left head gasket and used the black tube of Reinz sealant that came with the gasket kit. It did not smell of vinegar at all, but looked like a black RTV in every other way, including needing 24 hours to fully setup before any usage of the engine.
