This may be true if you want to do a mass delete of messages from your server, but you can definitely delete individual messages from GMail on your iPhone. I assume we're talking IMAP here. As someone else said, you can move your messages into the delete folder. Alternatively, you can turn archiving off and then you'll have a delete button replace the archive button.
