I also have an iPhone 8 and I am experiencing the same problem. It is also adding words to the sentences that I have not spoken. I’m not sure what is causing this. I have had an iPhone 5 six and seven and have use cases on all of them and have never experienced this before. I have even taken it to the Apple store so that they could see if something was going wrong with the speaker and according to them the hardware with my phone is great.
