I have the Amazon A Lady app on my iPhone and my wife, who's sighted, has 
the Ring Doorbell on her iPhone.  If I put the A Lady app on my wife's 
iPhone and pair the Ring Doorbell to the skill, do you know if I can then 
remove the A Lady app from my wife's iPhone after the connection has been 
made?  Thanks much.

This is not true.  It was announced a few months ago that it will work with 
any echo device. I just answered and ended a call to my Ring doorbell 2 with 
an echo dot third generation.

Perhaps those who already have the skill enabled but can't get it to work 
might need to disable the skill, re-enable it and re-discover the doorbells. 
It is working here and there are no echo devices with screens in my 
possession.
