Double tapping the mini player at the bottum of the screen still brings up the full player and I can still see the time remaining in the book. As far as I know I have the latest update. I double tap the player without the book actually playing. You can also lock the screen while the book is playing push the power button once and then swipe down the screen until you find the player controls, you can see what position you are in there. You can also open your audible library and scroll to the book you are currently listening to and it should tell you how much time is remaining.
