Ok, I figured this one out. the user guide does not explain it fully so I was confused.
to do this you first have to open a text conversation. You next double tap on the name/phone number at the top of the screen. This will bring up a list of choices. The user guide says to scroll down and click on the "block this sender" button. This is not correct because this choice doesn't show up in this list. You should find the "More info" button and click on it at this point. You will now see a list of choices which does include the block button. Double tap this button and you will be prompted for your confirmation of blocking or canceling.
I have already alerted the Apple folks about this deficiency in the user guide.
