I know this is a basic question, but are you sure it's not a network issue? You also might want to try a soft reset of your iPhone and see if that straightens the issue. I was having a problem with Apple Music streams sputtering and sometimes dropping and I did a soft reset and it seems to have fixed the problem for almost a month now.
