I'd also suggest using taptic time as well. I'd recommend practicing with it before just trying to use it in the middle of the night. As Nicola says it takes a certain knack to get it to work reliably.

When I sleep with my partner at night, I turn speech off using the three-finger double tap, and the taptic time almost always works for me. I do the same at work.
