Hi. I use my watch when I sleep every night. I created a sleep focus mode that 
comes automatically each evening at 9:15. I get a 15 minute wind-down before it 
goes in to sleep mode. The watch doesn't talk through the night and I have a 
nice alarm wake me up at 5. You can set one for the weekend if you like if your 
routine differs.

I had the same question. I want to use my apple watch to track my sleep but I 
don't want the watch talking throughout the night if I move.

With these settings turned off, do I have to tap the watch to get it to talk?
