You can tell SIRI your user Id, but SIRI or Dictate is not available in a
Password field since that would not be secure as somebody may overhear you
and in any case, it would be hard to dictate a password that is just random
characters, numbers and symbols and where letters are both upper and lower
case. Of course most people use simple words as passwords, but this is an
invitation for disaster.

As many pointed out, iOS is smart enough to know when you are in an email
field and typically your @ symbol is just to the right of the space bar and
to the right of that is a .com so if you use a gmail address, all you have
to type is your name, find the space bar and slowly slide right until you
are off the space bar and find the @ symbol. Then type gmail and find the
.com button.

One other thing you can do until you get better at this is to find the right
Enter key as this one won't activate simply if  you lift your finger, you
have to split or double tap it. Once Voiceover says "Enter" and if you are
in the Apple Id field, do a single finger swipe left. The first thing you
should find is the .com or maybe just a period depending on the layout, I
only have an iPhone and the iPad is slightly different because it has more
space. Then swipe left again and you should find the @ symbol.
