Hi, I can sort of answer some of your questions.
You need to get into an edit field such as the search field. Now use the roter to get to typing mode. Then swipe up and down to switch between the two. Putting apps into folders is very tricky on the iPad. It takes a lot of practice. I'm sorry I'm not too much help, but I can assure you it can be done.
