I had an occasion to use the pinch gesture not long ago, and though it took a few times to get the gesture working right, it really did work. However, in iOS 7 there is a new gesture of the 3 finger quadruple tap to copy the last spoken text, and again on another edit field to paste that text. I haven't used this yet, but it seems to be easier than pinching.
