The 3-finger quadruple tap is fantastic and it works very well. I even used it 
on a larger segment of text, maybe 2 or 3 lines, and it worked. 2 things,
though:

1. You can't use the 3-finger quadruple tap to paste the text, once you copied 
the text this way and go to an edit field where you want to paste it, you have 
to turn the rotor to Edit and select Paste. Not a big deal, but I thought I 
point it out.

2. If you copy a phone number in an email, where Voiceover will, for example 
say this:
450-222-3333 phone number detected
If you use the 3-finger quadruple tap and paste it you also get the text "phone 
number detected" at the end of the number.
Same applies if it says "link" after a link, you will get the word "link"
added at the end.
It really does copy the last spoken text even if this includes something that 
is not actually there. But it still is a very useful feature.

I had an occasion to use the pinch gesture not long ago, and though it took a 
few times to get the gesture working right, it really did work.
However, in iOS 7 there is a new gesture of the 3 finger quadruple tap to copy 
the last spoken text, and again on another edit field to paste that text. I 
haven't used this yet, but it seems to be easier than pinching.
