I do all the windows updates, but as an example, I bought a new laptop six months ago, and I stuck with windows 7, because I'm not willing to try 8 until it's been out a good long while and I get feedback from sighted and blind users. So, I feel the same about my phone, not wanting to upgrade the IOs for a while, till I see how well it does. But the upgrade happened easily and now I'm using the 7.
