Brilliant, thanks very much indeed, can I actually pick from a list of things 
that I want it to synchronise with as well rather than just synchronising 
everything both ways?

In order to prevent your iPhone from syncing automatically, open iTunes. Press 
alt E then up arrow once to Preferences and press enter.
You will be placed in the General tab. Arrow right until you hear that you are 
in the Devices tab then use the tab key to begin exploring the various 
settings. I believe the checkbox you want is the second option within devices. 
Make sure it is unchecked then tab to OK and press enter. Now your phone will 
only sync when you tell it to.
