Please, please do yourself a favor and listen to the 2 podcasts I posted 
yesterday regarding the GWMicro webinars on how to use iTunes. By studying 
that information you will prevent yourself from having to ask the list many 
iTunes related questions as well as having the information in an easy 
quickly accessible format for review. iTunes is a bit confusing to use, so 
having a guide while you explore will be very useful. <Smile>.

For now, I suggest you give the following iOS app a try as it will allow you 
to backup your Contacts on your iPhone until you learn iTunes well enough so 
that it doesn't surprise you in any way. It will be very painful to have 
entered all your contacts then find your iTunes experimentation has 
instantly and completely deleted them all. <Smile>.

With this app you will be able to backup your Contacts, review the backed up 
Contacts, and most importantly restore any single or complete list of 
accidentally deleted Contacts. This app is 100% accessible and a must have 
app which costs only $1.

In order to prevent your iPhone from syncing automatically, open iTunes. 
Press alt E then up arrow once to Preferences and press enter.
You will be placed in the General tab. Arrow right until you hear that you 
are in the Devices tab then use the tab key to begin exploring the various 
settings. I believe the checkbox you want is the second option within 
devices. Make sure it is unchecked then tab to OK and press enter. Now your 
phone will only sync when you tell it to.
