Ioana, if you heard the same sound for recording and for pause, how would
you know which you were actually doing if you didn't remember and got off by
one? I would think that if Apple wanted to do this, there would be a
different sound, say two dings for record, and one ding for pause.

Here is what's happening with the 2 finger double tap in voice memos in ios
7: 
When you first perform this action it starts recording and you hear a ding.
If you do it again you hear no sound. This made me and probably others
assume it did not pause the recording, since in earlier versions it would
sound 2 dings at this point.
It actually pauses none the less.
Double-tap again with 2 fingers and you can resume the recording. When done
and you want to stop find the done button.
Here we hear that 2 ding signal. 
I have suggested to apple to let us hear this 2 ding sound when we pause to
give a cue that the action was performed successfully.
