Hi Wendy, you could write the emoticons manually as you do on a PC or Mac, :) 
but I think most people in iOS who use them use the Emoji keyboard.
You need to enable this keyboard which from memory is in the regional settings. 
Once you have, there's a small button at the bottom of the virtual keyboard 
that lets you select from the available installed keyboards.
It's rather fun actually. There are quite a few pages of symbols and VoiceOver 
does a really good job of speaking them. I could major cool creds from my kids 
for using emoji when I text them.
