how do you hold a button on a touch screen?  I can never get that to work.

No, you can only send a voice message to somebody who has iMessage, it doesn't 
have to be iOS 8 but
of course they can only receive a voice message and not send one unless they 
have iOS 8.
\You double tap and hold the button as long as you are recording. After you are 
done let go and then
you have to explore the screen and find the Send button. You can also play your 
message. It does not
work like Whats App where the message is sent as soon as you let go of the 
button.
