OK, Question on this. I assume I have the latest update on my phone, but I
have not installed it. So, what if when I am ready to install, I do it
through iTunes. Does it use the update that is on my phone, or does it
download a later one if one exists? If it downloads a newer one, does it
delete the older one off my phone?

You can control whether your apps update automatically, but iOS updates are
a bit different. They will automatically download, but you can choose
whether or not you want to install them. You can delete the update but it
will download again at some point. If you don't want to install it, then
just know that whenever you go to General in Settings, "1 item" will also
show up. This is the current iOS 8 update that you can choose to install or
not.
